You're KALE-ing Me, Smalls

Kale puns are e v e r y w h e r e I turn these days. And I kind of love it. Sandlot fans, this one was for you :)

I brought this #kalesalad to a family get together last weekend. If you're looking for a quick, easy, affordable and down right delicious dish to bring with you to your next event, this one is sure to impress even the biggest kale skeptic.

I n g r e d i e n t s :

🌱1 head of kale, rinsed 🌱3 cups quinoa, cooked (about 1 dry) 🌱2 cups yellow split peas, cooked (chickpeas would go well here too) 🌱1.5 large purple sweet potato (my fave!), cubed and oven baked 🌱Use your desired quantities of the following: chopped raw asparagus, cucumber, red cabbage, medium red apple, 1 medium carrot (shaved) 🌱1 large sautéed yellow onion in EVOO 🌱Apple cider vinegar and sea salt to taste 🌱EVOO for baking and massaging into kale 🌱Optional: top with avo, hemp seeds, tahini, walnuts, pumpkin seeds

Turn on oven to 375F and bake sweet potato cubes on a lined, oiled baking sheet for about 30 minutes. Check and mix halfway through. I have baked them without oil with no issues but definitely check and mix more often. Rinse and soak quinoa before cooking. Rise and boil beans. I typically buy mine in bulk now and rinse + soak overnight before boiling. This reduces the boiling time and increases digestibility. Think: beans, beans they're good for your ♡, the more you soak them the less you... While the above are baking and cooking chop other vegetables. Rinse and chop kale. In large mixing bowl massage EVOO into kale until it begins to soften and wilt. In a separate bowl combine all other ingredients. Pour veggie mixture on top of kale and gently combine. Season with additional acv and sea salt as desired.
